Every year, we expand out sugaring operation on the farm. This year we tapped over 220 trees. We use a combination of bags and buckets and collect every day or so for a few weeks (as long as it's flowing!). It's a lot of work, but it's something we look forward to every year because it marks the beginning of spring and the awakening of the earth. We frequently will drink the fresh sap from the trees, as some old timers did years before us, claiming that it has medicinal qualities ("Spring Tonic"). Oh, and there's the SYRUP.
